After 22 inches of snow last week, winter has officially arrived here in Charlottesville! I finally made it back over to the garden this afternoon to find it still mostly covered with snow. With temperatures remaining in the 30’s, everything is pretty well frozen. The chard has finally seen its last days and wilted over as well as the kholrabi and remaining greens. Our row covers didn’t exactly hold up to the snow either (see pictures below). I was able to dig out a few carrots and beets and harvested a well frozen head of cabbage and cauliflower – all of which are now simmering on the stove in a delicious homemade vegetable soup.
Hope you all have a chance to enjoy some warm winter soups and time with family and friends this holiday season!
